stewed plums with coconut yoghurt, granola and VIVO Nue Alkaline Complete Protein Powder

Autumn Eating - Stewed Plums

With our beautiful Autumn days here in the Southern Hemisphere we're making the most of the delicious stone fruit that is still in season.

Our new favourite breakfast... stewed plums, with coconut yoghurt and granola with a scoop of  VIVO Nue Alkaline Complete Protein Powder. The best part, this breakfast can be totally prepped before hand, just put it all together in the morning for a delicious, protein packed meal.

Ingredients
6 plums, halved and stones removed
1 cup water
1 tablespoon fresh lemon juice
Lemon zest from 1/2 a lemon
1 cinnamon stick
Star Anise
Maple Syrup - to taste

Method
1. In a medium saucepan on low heat, add the water, lemon juice and maple syrup and stir to combine.

2. Add the cinnamon stick and star anise and bring to the boil stirring constantly.

3. Place the plums and lemon zest into the saucepan and cook on a medium heat for 3 to 5 minutes or until the plums are tender.

4. Remove the plums from the heat and allow to cool. The plums can be stored in a airtight container in the fridge for up to a week.

Putting it all together... in a serving bowl combine your favourite yoghurt (we like to use a natural coconut yoghurt, it helps to bring out the flavour in the stewed plums) with 1 scoop of VIVO Nue Au Naturel Alkaline Complete Protein Powder or VIVO Nue Vanilla Creme Alkaline Complete Protein Powder and stir well to combine. Top with 2 to 3 stewed plum halves and your favourite granola. Serve and enjoy!
