Coconut -Â we love using dessicated coconut to add texture or shredded coconut for an added delicate crunch to our raw treats. Look for unsweetened dessicated or shredded coconut at your local health food store or supermarket.Â
Medjool Dates -Â with a sweet, caramel like flavour medjool dates' sticky texture helps bind the ingredients together, while also offering a host of health benefits including a natural energy boost and are an excellent source of phytonutrients. Higher in sugar than most other fruit, we like to eat medjool dates in moderation.
Almonds - we use raw, unsalted almonds in our protein balls. Nutrient rich, almonds are full of vitamin E, potassium and magnesium and are a good source of antioxidants.
Ingredients
1 cup dessicated coconut or shredded coconut
2 cups medjool dates, pittedÂ
1/3 cup raw almonds
Pinch of sea salt
Method
1. Add the raw almonds to a high speed blend and blend until it resembles almond meal. Add the remaining ingredients to the blender, except for 1/2 cup shredded coconut and blend until smooth.
2. Roll the mixture into small balls and coat each one in coconut. Place in a lined air tight container and store in the fridge or freezer.
