Chocolate Gingerbread Muffins

Serves: 9 small muffins

INGREDIENTS
1 cup plant-based milk
1 tsp apple cider vinegar
1 1/4 cup plain flour (sub for wheat flour, white flour, GF flours)
1/2 tsp baking soda
1 tsp baking powder
1/4 cup cocoa powder
1/3 cup Vivo Nue Coco Bliss Protein 
1/4 tsp salt
2 tsp cinnamon
1 tsp ginger
1 tsp mixed spice
1/2 cup coconut sugar
1/4 cup molasses
1/3 cup apple sauce

METHOD
1. In a mixing bowl, combine the milk and vinegar. Add the sugar, molasses, and applesauce, then whisk until fully combined. Gradually pour in the milk mixture, and whisk.
2. Sift the flour, cocoa powder, protein powder, spices, baking powder/soda, and salt into the bowl. Gently fold everything together.
3. Line a muffin tray with paper liners and fill each liner about three-quarters full with the batter. Bake in a preheated oven at 180°C for 20 minutes or until a toothpick inserted into the centre comes out clean.
