Easter may be over but these Fudgy Brownie Eggs deserve all year round attention! The best thing is, these little eggs of goodness are gluten free, dairy free and packed with superfood fuel like hemp flour, flax meal, cacao, super shrooms, our Cocobliss Plant Protein….the list really does go on! Give them a try this weekend, and you won’t regret it when you feel like a little something sweet during your #workfromhome week!

FUDGY BROWNIE EGGS

These warm and fudge brownie bites should be added to your next Iso-Baking list because they are so easy to whip up, yet super DELISH, ultra chocolatey + rich in plant protein, healthy fats and fibre (thanks for the humble hemp flour!!) - Perfect for snacking or lil choc fix 🍫 throughout the day!! Molten dark choc in every bite is just HEAVENLY!! Bonus: I added medical mushroom powder for an extra health kick & MCT for energy-sustaining healthy fats😝 P.s. You can make them into any shapes you like e.g. squares/ balls 😉👌🏻

 

Serving

Makes 12 mini ‘eggs’

 

Ingredients:

1/4 cup almond meal @honesttogoodnessau

1/4 cup Hemp flour @anandafoodaus (got mine from goodnessmebox @goodnessme.market ) or more almond meal

3 tbsp chocolate protein (I used Cocobliss @vivonue ) or more almond meal plus cacao powder

1 tbsp flax meal (I used Smoothie Booster @plantbased_doctor )

2 tbsp cacao (I used Chocolate Greens @365nourish )

1.5 tbsp sweetener or choice (I used @rawearthsweetener )

Optional: 1 tsp Super Shrooms @drink.mushrooms + 1 scoop Collagen Creamer @ketao.au

1/4 tsp salt

2 tbsp tahini @honesttogoodnessau

1/4 cup warm almond milk (I made mine with @nutsbynaturemylk )

Filling: Dark chocolate chips as much as you want!! (I love @rumblespaleo ’s Choc Rocks!)

 

Method: 

  1. Preheat oven to 170C. 
  2. Combine all the dry ingredients together in one bowl. 
  3. Mix tahini, sweetener and vanilla until creamy, then add in almond milk. 
  4. Add wet to dry ingredients to form a sticky dough. 
  5. Divide into 12 mini balls, flatten to place choc chips in the centre and roll into balls again. 
  6. Bake for 5-6 minutes or until firm.
