Our Take On Avocado Toast With Peppery Bruschetta

Ingredients - serves 4
2 avocados - peeled and pitted
Juice of 1 lime or to taste
1 scoop of VIVO Nue Au Natural Alkaline Complete Protein Powder
3 - 4 vine ripened tomatoes, finely chopped
1/2 red capsicum, finely chopped
1 small radish, finely sliced
Pinch of cayenne pepper or to taste
4 slices of sourdough

1. Place avocados in a bowl with lime juice and mash with a fork. Add protein powder and mix until well combined.
2. In another bowl add the tomatoes, capsicum and radish and mix to combine.
3. Toast sourdough slices and once cooked, spread over avocado mixture.
Layer over the tomato mix and sprinkle with cayenne pepper. Enjoy!
