Peanut Butter Stuffed Banana Muffins
One of our favourite food combo is definitely banana and peanut butter. If you haven’t already tried it we strongly recommend you do!
These muffins are made with simple, natural ingredients and are packed with our plant based and alkaline based protein
Ingredients
- 1/4 cup Oat Flour*
- 1/4 cup Buckwheat Flour
- 1/4 cup @vivonue Au Naturel Protein Powder
- 2 small Bananas (mashed)
- 2 tsp Peanut Butter
- Extra Peanut Butter for the centres
- 1/4 cup almond milk**
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of Pink Salt (optional) *can use any flour of your choosing
**amount of almond milk may vary depending on your choice of flour and protein powder and their absorbency
Method
1. Preheat oven to 180°c
2. In a bowl combine mashed banana and peanut butter
3. Add in flours, protein powder, baking powder and soda, cinnamon and salt and stir until combined
4. Add almond until a thick and smooth mix is achieved
5. Pour half of the mixture into lined or non stick muffin pans. Place a dollop of thick peanut butter in the centre. Add remaining mixture on top
6. Place in the oven and bake for 20 minutes or until cooked through
7. Store in the fridge for 3-4 days. I recommend microwaving them for around 10 seconds before eating them
