Raw Dukkah

Dukkah is an Egyptian nut and spice mix that is absolutely gorgeous and is a fancy addition to any dinner party. Usually the nuts, seeds and spices are roasted in dukkah, but the high temperature required for roasting the nuts causes the oils in the nuts to go rancid, which not only effects the taste, but destroys the nutritional benefit of the monounsaturated oils.

This beautiful mix is lovely for dipping with bread and  olive oil, sprinkling over salads or soups, or with roasted cauliflower. It is full of minerals such as zinc, magnesium, potassium, selenium, while giving you lots of good oils for healthy skin, hair and nails and fibre to improve your gut function. 

Ingredients

1 cup raw/activated mixed nuts (almonds/cashews/brazil nuts/walnuts/hazelnuts)

1/3 cup sesame seeds

1/3 cup chia seeds

1/3 cup pepitas (pumpkin seeds)

30g whole cumin seeds

30g whole coriander seeds

1tsp sea salt

Ground pepper to taste 

Directions

Roughly chop (or use a food processor) the nuts, pepitas and coriander seeds. Add these and the rest of the ingredients to a bowl to mix them up, and keep them in an airtight container, such as a glass jar, in the pantry, or better yet, the fridge.
