INGREDIENTS
1 cup buckwheat flour (or substitute for spelt/wheat flour)
1 scoop (⅓ cup) of Vivo Nue Vanilla protein powder
1½ tsp baking powder
Small pinch of salt
310ml soy milk or any dairy-free milk
⅓ cup (1 small) mashed ripe banana
1 tsp vanilla extract
METHOD
1. In a large mixing bowl whisk the milk, vanilla and banana. Add the flour, baking powder, protein powder and salt, and combine.
2. Heat a non-stick pan to low-medium heat. Pour 1/4 cup of batter onto the pan, once bubbles appear flip the pancake, cooking roughly 1-2 minutes each side.
3. Stack pancakes on a plate and serve with coconut yogurt, fruit, coconut flakes and agave or maple syrup.
